It's tough to make coffee in Puerto Rico, where some of the world's finest coffee comes from, but this is about how it was brewed and served in the 18th C. We will be using coffee from PR and roasting it, then brewing it! The Spanish started growing coffee on the island in 1735-36; they had been growing chocolate for even longer, going back to the 17th Century, with some records suggesting the 16th century. Also, many drinks made from vinegar and fruits or spices were the 18th C "Gatorade" - Switchel comes to mind. These drinks are said to have been created in the Caribbean.
Again tough act to do in PR, but in the 18th C they did not eat chocolate as a confection but drank it as a drink!
Spices were added to the Chocolate to alter the taste. There even was a chocolate made with Achiote to make it red called Rose Chocolate
Switchel the 18th C "Gatorade" made with cider vinegar. Shrub was a fruit mix of juice and sugar making a come back in high end cocktails
